{Our Favorite Chili Recipe}

There’s just something about a pot of chili simmering on the stove that feels like fall in Texas. It’s hearty, comforting, and perfect for those evenings when the air finally turns a little crisp. Now, I’ll be the first to admit... our favorite chili recipe is not anything super complex or secret. Actually, it’s quite simple. But it’s our favorite, and I think that’s what makes it special.




This batch is on the smaller side because there are only two of us in the house that eat chili. Of course, you can always double or triple it depending on your family size or if you’re hosting friends.


Ingredients

  • 1 lb ground beef

  • 1 (8 oz) can of tomato sauce

  • 1 (10 oz) can of Rotel

  • 1 (4 oz) can of green chiles

  • 1 can of kidney beans

  • 1 packet of H-E-B Texas Chili Seasoning Mix (the true star of the show!)

  • Shredded cheese for topping

  • Crackers if desired


Instructions

  1. In a large pot, brown your ground beef and add in the green chiles.

  2. Once the beef is cooked through, drain the grease.

  3. Stir in the tomato sauce, Rotel, kidney beans, and the Texas Chili Seasoning Mix.

  4. Bring everything to a boil, then reduce the heat, cover, and let it simmer for about 20 minutes.

  5. Top with your favorites and serve hot!


In our house, we keep it pretty simple. I like mine with a good sprinkle of cheese, and I eat half with crackers and half without (because honestly, it feels like two meals in one that way). Nate will sometimes add sour cream to his bowl, but otherwise we both like to let that bold Texas chili flavor shine. Sometimes we make a cornbread to go with it!
