My heart is in full-on fall mode right now, and you know what that means… a little fall baking had to happen! There’s just something about the scent of pumpkin and spices filling the house that makes me feel like autumn has officially arrived. Today I wanted to share the simplest little recipe with you. Wait… can I even call it a recipe if it only has two ingredients? lol! Either way, these muffins are too good not to share.
Ingredients

1 (15 oz) can of pure pumpkin (make sure it’s not the pumpkin pie filling — just plain pumpkin!)

1 (15.25 oz) box of spice cake mix

Preheat your oven to 375 degrees.

Spray a muffin tin with cooking spray or line with cupcake liners (I used liners but still sprayed them lightly).

In a large mixing bowl, combine the dry cake mix and the can of pumpkin. Start folding it together with a spatula.

Then, grab your electric mixer and beat the mixture until it’s smooth, well combined, and a little fluffy.

Fill your muffin tin with the batter.

Bake for 18–20 minutes (or until a toothpick comes out clean).
That’s It!
And that’s all there is to it… two ingredients, minimal effort, and maximum fall flavor. These muffins are soft, moist, and packed with pumpkin spice goodness. The best part? They make your entire house smell like fall while they’re baking.
We had a few fresh out of the oven, but I think they were even better the next morning. Something about letting those flavors sit overnight just made them sweeter. Pair one with a cup of coffee and you’ve got the coziest breakfast ever.
If you want to get creative, you could add a few extras to the batter...chocolate chips, chopped nuts, or even a dollop of cream cheese filling. But honestly? They’re delicious just as they are.
